Today I'm teaching you how to make my current favourite dish! Healthy teriyaki salmon with a raw broccoli salad. It is the most yummy thing you could ever have! I have made things super easy, by taking a ton of pictures of every step you go through to make this lovely dish! Please enjoy!
This dish serves 2-3 people. You will need:
- 1 broccoli head
- 1 red onion
- 1 red apple
- fried bacon crunch
- creme freche (5 heaped tbsp)
- vinegar (1 tbsp)
- sugar (5 tsp)
- teriyaki sauce
- salmon steaks
The first thing we do, is to chop up the broccoli, red onion, and the apple. It is important to use a red onion, because their taste aren't as tangy and strong as other onions. It fits better into this dish. Another thing. You can choose to steam your broccoli, if you don't want the crunch. But I love my broccoli salad raw, and this also mean you don't loose any of the important nutrients in the process. yum yum!
In a bowl we're gonna mix up 5-6 heaped tablespoons of creme freche. If you want a low calory option, use greek yoghurt. Into the creme freche you add 1 tablespoon of vinegar and 5 teaspoons of sugar. I prefer white sugar, and rice wine vinegar, but you can be creative and use any vinegar and sugar you prefer.

And here's the important part of the salad. Put everything up in the bowl with the dressing, but do NOT mix it yet. Put a packet of fried bacon crunch on top, and let it sit until you have to serve.
The night before you plan on making this dish, you take some frozen salmon steaks out of the freezer, put them in a tight ziplock bag with a good splash of teriyaki sauce. Don't be shy to use enough to have them all coated. Then put it all on a plate and in your fridge. When you do this, the fish will thaw gently, not go bad in the process, and marinade for a day in the lovely teriyaki sauce. When it comes to cooking salmon, there is only one thing to do. Use high heat for a short time, and don't turn the steaks around too much. Keep an eye on it, and when they look done, take them off the heat.
Now it's time to plate up the salmon, and finally mix that yummy salad. Serve straight away, so the salad don't get boring, and the salmon don't get cold. Doesn't it look good?
