Tomato And Mozarella Bruschetta

Hi Beauties!

Who else is being super lazy in this summer heat?! I definitely am! So here's a quick and easy thing you can serve your friends or family, that takes little efford, but looks amazing!

Bruchetta!

First things first, you will need

  • 1 Baguette
  • 1 tomato
  • 1 big mozarella ball
  • Fresh basil
  • Extra virgin olive oil
  • salt
Preheat the oven to 200c/390f, and cut the baguette into slices. Every slice is then brushed gently the olive oil. Peel the basil leaves of it's stem, and wash them and the tomatoes. Cut the mozarella and tomato into slices. I like my tomatoes really thin, but you can do this however you please. Now it's just a matter of putting everything together. Find a wire rack and place the baguette on it. This will make sure air get's under the bread, making them nice and crispy. On top of it, you put mozarella, a leaf or two of basil, a tomato, and a small sprinkle of salt. It'll draw out the flavour of the tomato, making it more fragrant. They only need about 10 minutes in the oven. But every kitchen is different, so keep an eye on them. When the cheese is melted, and the bread is nice and golden, take them out.

And now you're done! How easy was that?

I made this as an afternoon snack, alongside some cut slices of watermelon. A perfect summer treat in this hot weather. I recomend you make the amount I show here for 2 people. If you don't plan on serving anything else, make more. They're super delishious, and will go down fast. I am not a big fan of tomatoes, but I LOVED these!
